Coca is a Spanish flat bread similar to pizza, and can include everything from fruit to meat. This coca is for a basic cheese coca (coca de queso). We call it Coca Loca which translates to “crazy bread” because the kids go absolutely crazy when we make it. Feel free to add sliced sausage or grilled onions as are typical with this dish or some not so traditional toppings like Roma tomatoes, asparagus, portobello mushrooms, red peppers, goat cheese, or even try drizzling with honey. The variations are endless!
Ingredients:
- 2.5 cups bread flour
- 1 cup + 1 tablespoon oil
- 1 packet of rapid rise yeast (2 ¼ teaspoon)
- ½ teaspoon salt
- ½ teaspoon of sugar
- non-stick cooking spray and butter
- Parmesan cheese
- provolone cheese
