Mile High Twice Baked Potatoes with Cream Cheese and Sour Cream

Someone once told me that love is like potatoes. In the beginning they're without shape. Uncooked, they're pratically inedible. Like a cold heart buried in the Earth, you've got to dig to find it... and once you do, unlike other plants, potatoes don't wither and die like cut flowers.  No, potatoes grow, they start laying down roots the moment you forget about them. You can fry them, bake them, throw them, cut them, and they'll just get better every time. They only know to give.

People may fall in love with roses, but the ugly potato will nourish you, it will warm you, It doesn't exist to be seen, it exists to feed a hunger. Love is the hunger of the heart.

With that said, why not try these mile-high double baked potatoes with cream cheese and sour cream? We use an extra (spare) potato to overfill the spuds for the best jacket potato you've ever tasted. I can't say you'll want to share it with your loved one, but you probably should.

Mile High Twice Baked Potatoes Recipe (6 count)
No more flat baked potatoes. The trick is the extra one.


● 7 potatoes
● 1 small container of cream cheese
● ½ cup of sour cream
● 1/4 stick of butter, plus 1 tablespoon for basting
● ½ teaspoon of salt
● ½ teaspoon of all-season salt
● 1/8 teaspoon of black pepper 
● chives (for garnish)


1. Peel 1 potato.
2. Take the 6 un-peeled and 1 peeled potato and microwave on high for 10 minutes, flip and microwave for an additional 10 minutes.
3. Set peeled potato aside.
4. Take knife and remove the very top of the 6 potatoes. (about ¼ inch) *Don't cut in half! 90/10 Cut.
5. Scoop insides out with spoon.
6. Microwave butter, and with pastry brush glaze potato cavities.
7. Sprinkle insides with salt, and place scooped potatoes aside in a bowl.
8. Place empty skins in preheated oven at 375° F (190 C) for 15 minutes.
9. Mash insides adding extra potato, salt, pepper, sour cream, and cream cheese. Mix thoroughly
10. When skins have cooked for 15 minutes, remove and stuff till they're a mile high.
11. Bake an additional 15 minutes, garnish with chives, cooked bacon, etc. and enjoy!
