Keto Fried Chicken

One of the more interesting discoveries we've made lately is that you can bread chicken in parmesan cheese and fry it. This is great for me because I can't have traditional breading. While I love grilled or baked chicken, there's something to be said about fried. I mean, I'm living in the South... it's practically a necessity. Honestly, I think I like this Keto friendly, low-carb version more than I do traditional fried chicken. The cheese adds something delicious to it that really makes it tasty. You can, of course, make bone in chicken but I chose to do chicken tenders the other night.
First I cut my raw chicken up into tenders and placed them in a 13x9 pan.I covered them in onion and garlic powder, paprika, cayenne and some salt and pepper. Pizza Hut Burnin' Hot Buffalo Wing Sauce Recipe

Have you tried store bought hot wing sauce and never found it hot enough? Want a quick and dirty recipe hack for Pizza Hut's super hot Burnin' Hot Buffalo Wings? Sure you do! It's really simple too. Grab a bottle of Frank's Wing Sauce in Hot flavor for your base. You could also substitute another brand in a pinch, but this just nails the recipe to the freaking wall. You'll also need some Tabasco sauce (original) and some sweetener. Pizza Hut uses corn syrup but you can pretty much use what you have on hand. I used some liquid sweetener (the kind you put in your coffee) where 1/2 teaspoon equals about 4 teaspoons of sugar (perfect for my diabetic self).

Is it good? Oh yeah. It's the kind of heat that doesn't hit you till the second wing then tingles your lips then opens the sinuses like a cracked dam. I might look like a white girl from the outside but I can take some serious heat. These are the perfect balance of flavors.

Keto Reece's Peanut Butter Fudge

Do you love Reece's Peanut Butter Cups? Are you doing Keto or a low-carb diet (like Atkins or South Beach). Well I've got a solution for you and it's only two ingredients, only takes a few minutes to make and is absolutely 100% delicious!

Grab a bag of Sugar-Free Hershey's chocolate chips. I found mine at Wal-Mart on the baking aisle. Grab one jar of natural style peanut butter from almost any grocery store. Toss it in a bowl and microwave until it's melted. Stir, pop in a pie tin and refrigerate until solid. Cut into single servings and enjoy. It's high protein, low carb and 100% amazing.

It's about 5g carbs a serving, which is about the same as what you'll find in low-carb protein bars. Of course this is far better if you have a sweet tooth, but considering there is some sugar alcohols (7g), I still keep this for an occasional reward.
