Keto Fried Chicken

One of the more interesting discoveries we've made lately is that you can bread chicken in parmesan cheese and fry it. This is great for me because I can't have traditional breading. While I love grilled or baked chicken, there's something to be said about fried. I mean, I'm living in the South... it's practically a necessity. Honestly, I think I like this Keto friendly, low-carb version more than I do traditional fried chicken. The cheese adds something delicious to it that really makes it tasty. You can, of course, make bone in chicken but I chose to do chicken tenders the other night.

  1. First I cut my raw chicken up into tenders and placed them in a 13x9 pan.
  2. I covered them in onion and garlic powder, paprika, cayenne and some salt and pepper. You could of course use any seasoning you wish, such as, this.
  3. Pop it in the oven at 375 F and bake till they reach about 180 F (45-60 min)
  4. Then just let them cool for a few minutes, dunk them in some eggs (in one bowl) and bread them in some cheap shaky parmesan (the powdery kind).
  5. Then shallow pan fry in some hot oil for approximately 2 minutes aside.
...and that's it. Super easy and super delicious. It's fried chicken without the carbs!

You can also toss a packet of Hidden Valley ranch seasoning in the mix for an unusual take of the whole fried chicken taste.

So now the plan is to combine the fried chicken with my low carb pancake/waffle recipe and have chicken and waffles. Seriously, it's magically delicious.
